I have never claimed to be a good cook, far from it. Today though, I had some extra bananas that were a little past their prime and I decided rather than throw them away (I'm always throwing away bananas!) I would try to bake something. I hopped on to Pinterest and found a recipe for "healthy" cookies that only used 3 ingredients from www.feelgreatin8.com. I decided to be a little adventurous and added a few ingredients of my own and have to say that the cookies aren't half bad. I'm on Weight Watchers though so any cookie with chocolate chips would taste awesome right now. I thought I'd share the recipe with you just in case you want a quick and super easy recipe to satisfy your cookie cravings.
2 ripe bananas, mashed
1 cup oats (quick or regular)*
2 tablespoons of natural peanut butter
2 oz of applesauce
1/2 teaspoon cinnamon
1/2 cup chopped nuts
chocolate chips or raisins
Instructions:
- Grease a cookie sheet and preheat oven to 350 degrees F.
- Mix first four ingredients together. Because bananas vary in size, you may need to adjust the amount of oats you add. The texture should be like a wet cookie dough.
- Add any mix-in you want (chocolate chips, raisins, nuts, etc.)
- Scoop dough onto the greased cookie sheet.
- Flatten dough slightly with fork.
- Bake for 15 minutes.
- I'm going to store the cookies in the fridge or freeze them so I don't eat all 2 dozen today.

*You may want to chop the oats down a little so the cookies hold together better.
